In recent years the problems associated with geese have been growing. This problem is made worse now by the prevalence of non migratory species and the occurrence of feral geese which at one time were maintained as ornamental by large landowners.

Is it possible that you have a profitable industry here ? I can just see the label in my mind – Smoked Wild Scottish Goose.

Mass produced goose in my neck of the woods are about £15 each, and that’s the cheapest you could buy.

There are no production costs, the geese will naturally do that for you. You just need to catch them humanely. Perhaps in nets. I can see how this would not work in fields of grain. The harvesters would do as much damage as the geese. But it could work in fields of brassica’s

Can geese be smoked? Someone must have tried it. Can it be cured, as ham is cured?

If this is ridiculous please just ignore it. I am sure this has been already thought of. There is probably some reason why it has not been done already.
